Uzbek Lamb DumplingsIngredients:
Stuffing:
1 kilogram lamb or beef sirloin
4 large onions
100 grams tail fat
100 milliliters water
1 teaspoon black ground pepper
2 to 3 peppercorns
2 to 3 bay leaves
Salt, to taste
Dough:
500 grams flour
1 teaspoon salt
250 milliliters water
Directions:
Dough: Knead flour, 1 teaspoon salt, and 250 milliliters water until smooth and stiff. Let stand for 10 to 15 minutes. Split into small walnut-sized balls or roll out dough in a large crust and cut into 10-centimeter squares.
Stuffing: Boil 100 milliliters water. Add salt, bay leaves, and peppercorns and let simmer.
Chop meat and fat in small pieces or grind coarsely. Add chopped onions, ground pepper, and spiced water. Mix thoroughly.
Roll out the dough balls into circles. Put 1 tablespoon stuffing in center of circle. Bend across the center and then seal edges, forming half-moon pockets or any other shape you like.
Steam manti for 45 minutes.
Serve on plate with ground pepper and butter or in a bowl with some broth.
